    Southwestern Chicken Soup
    1/4 lb celery, diced
    1/8 lb red bell pepper, diced
    1/4 lb yellow onion, diced
    4 ears corn, fresh, off the cob
    1/4 lb unsalted butter
    1/4 oz garlic, chopped
    7/8 lb breakfast potatoes
    1 1/8 lb roasted whole chicken, skin and bones removed, diced
    1/4 gallon milk
    3/8 lb flour
    1/8 oz chicken base
    3/8 tbsp Tabasco sauce
    fresh ground black pepper to taste
    1/16 oz flour tortillas, julienned into 1/8” wide strips
    1/16 oz corn tortillas, julienned into 1/8” wide strips
    cumin to taste
    cayenne pepper to taste
    salt to taste
    Procedure
    1 Add butter to a soup pot and add celery, red pepper, yellow onions, garlic, and chicken base. Sweat vegetables lightly. Add the chicken. Add in flour to make a roux. Then add milk and adjust the seasonings with tabasco and pepper. The soup should not need salt.
    2 For garnish, cut the flour and corn tortillas into 1/8” wide strips and fry until golden. Season with cumin, cayenne, and salt. Then place on top of the soup before serving.

    ‘Ohana Honey Coriander Wings
    1 tbsp kosher salt
    1 tbsp paprika
    1 tbsp granulated sugar
    1/4 tsp black pepper
    1/4 tsp turmeric
    1/4 tsp ground cinnamon
    1/4 tsp granulated garlic
    1/8 tsp cayenne pepper
    2 lb chicken wings and drummettes
    Honey Coriander Sauce:
    1 tbsp chili powder
    1/2 tsp ground ginger
    1 tbsp lime juice
    1 tbsp ground coriander, toasted
    1/2 cup low sodium soy sauce
    1 cup honey
    2 tbsp cornstarch
    1/4 cup water

    Procedure
    1 Combine salt, paprika, sugar, black pepper, turmeric, cinnamon, granulated garlic, and cayenne pepper in a mixing bowl. Whisk to break up clumps of dry powder. This is the wing seasoning.
    2 Take the wing seasoning and combine with wings and drummettes. Toss thoroughly to coat wings evenly.
    3 Line cookie tray with parchment paper. Place chicken on tray evenly spaced out. Let marinate for one hour in fridge.
    4 Preheat oven to 475 degrees F. Cook wings for 35-40 min or until outside is crispy and internal temp is at least 165 degree F.
    5 While wings are cooking, begin sauce with lime juice, soy sauce, and honey. Combine these ingredients in a non-reactive pot.
    6 In a separate bowl combine chili powder, ground ginger, and toasted coriander.
    7 Lightly sprinkle dry ingredients into wet and whisk constantly to avoid clumping.
    8 Heat on stove top to a boil and let simmer for 1 min.
    9 Combine water and cornstarch. As sauce is simmering add cornstarch and water solution. Continue to simmer until sauce is thick.
    10 Keep hot until wings are ready. When wings are done, be sure to drain well and discard the fat that renders off. If not, the sauce will be runny and not coat well.
    11 Combine the wings and sauce in a clean mixing bowl and toss thoroughly to ensure even coating.
    12 Serve hot and enjoy!
    13 You may garnish with sesame seeds. Use a mixture of black and white sesame seeds.

    We made these today for a New Year’s Day party. I bought 6 lbs of drummettes and doubled the recipe. BIG MISTAKE! The seasoning doubled was fine. However, double the amount of sauce was ridiculous. I only ended up putting 1/2 of the amount on the 6 lbs. of wings and trashing the other 1/2. Also, in the future I would use 1/4 tsp. of ginger as they were quite ‘gingery’ compared to the ‘Ohana ones. However, with that said, we loved the wings. They were delicious and a great reminder of what we have to look forward to again at ‘Ohana. – Disboards Poster 09/07/2012
    I wanted to report that we just had these wings for our “SuperBowl” party (just DH, me & the kids!) They were fabulous… and really sticky!! Next time we will adjust the chilil powder and cayenne pepper down just bit- we usually like spicey, but this we just a bit much for us. I also only used half the sauce for the amount of wings the recipe called for- maybe I misread something somewhere… but that was a lot of sauce. Other than that– perfection! We ate at ‘Ohana in December and the kids had been really excited about trying these at home… my 8 year olds are real foodies!! Thanks! – Disboards Poster 09/07/2012

    Loaded baked potato soup is what’s for dinner. Will post pix later. Couldn’t have made it without my sous chef Abigail. It was amazing.

    Hula Hoop
    1 fl oz Malibu rum
    1/2 fl oz banana liquor
    1/2 fl oz melon liquor
    3 fl oz pineapple juice
    1 splash grenadine
    Procedure
    1 Mix all ingredients together. Serve on the rocks.

    Spiced Tea
    2 cups of Tang
    2 cups of sugar
    1/3 cup of lemonade (I use the brand Country Time.)
    1/2 cup of instant tea
    3/4 teaspoon ground cloves
    1 1/2 teaspoons of cinnamon

    Mix all of the above ingredients together well. Then mix 2-3 heaping scoops with hot water. This is delicious and a staple around our house every fall. :coffee: :coffee: :coffee:

    Caribbean Pasta
    1 oz red peppers
    1 oz green peppers
    1 oz diced onions
    1/4 oz jalapenos
    2 oz heavy cream
    1 oz white wine
    1 oz tomatoes
    4 oz chorizo sausage
    1/4 oz cooking oil
    1/4 oz goat cheese (per serving)
    1 oz spinach
    4 oz cooked orechiette pasta
    Add ons:
    6 pieces shrimp
    5 oz chicken breast

    Procedure
    1 In large pan, bring water to a boil and add 4 ounces of Orechiette Pasta
    2 Cut vegetables (small diced red, green, and jalapenos peppers, and onions) (medium diced
    3 tomatoes and Chorizo sausage)
    4 In hot sauté pan, add oil, onions, peppers (red, green and jalapenos) and cook until tender
    5 Add Chorizo sausage and any other add-ons you would like to have
    6 Deglaze with white wine
    7 Add heavy cream and add pasta, tomatoes, and spinach
    8 Sprinkle goat cheese on each serving
