10dedfish177 XPArroz con Pato (Roast Duck with Cilantro Rice)
1 duck, 4 to 5 lb, cut into 8 serving pieces
1/4 cup fresh lemon juice
1 tsp ground cumin seeds
1 tsp salt
1/4 tsp freshly ground black pepper
1/4 cup canola oil
3 cups light beer
1 cup water
2 cups long grain rice
1 cup frozen defrosted peas
1 cup fresh cilantro, finely choppedProcedure
1 Set the duck pieces in a shallow dish and rub in in the lemon juice, cumin, 1/2 tsp salt and 1/8 tsp pepper. Cover and refrigerate for six hours.
2 In a large heavy casserole, heat the oil over high heat until it hazes. Add the duck and brown it well on all sides. Drain off the fat from the casserole and add the beer and water. Bring liquid to a boil, reduce heat, cover and simmer for 45 minutes. Transfer the duck to the plate, cover and keep warm.
3 Pour the liquid off and strain and measure 3-1/2 cups. Pour the liquid back to the casserole and bring it to a boil. Stir in the rice, bring liquid back to a boil, reduce the heat and cook the rice for 20 minutes, covered.
4 Stir in the peas, cilantro, 1/2 tsp salt and 1/8 tsp pepper. Arrange the duck on the rice; cover the casserole and return it to low heat for a few minutes to heat the duck.
5 To serve, mound the rice and peas on a serving dish and arrange the duck pieces on top.

1 fl oz Myers’s rum
3/4 fl oz peach schnapps
3 fl oz orange juice
1 splash grenadine
1/2 fl oz Bacardi 151 rum
cherry for garnish
orange slice for garnishProcedure
1 Fill hurricane glass with ice.
2 Combine Myers’s rum, schnapps, orange juice and grenadine. Pour over ice.
3 Top off with Bacardi 151 rum.
4 Garnish with cherry and orange slice.

Espresso Syrup:
1/3 cup water
1/2 cup granulated sugar
2/3 cup brewed espresso or strongly brewed coffee
1/4 cup brandy
Mascarpone Filling:
1-1/2 cups heavy whipping cream
1/3 cup sugar
2 tsp pure vanilla extract
2 cups mascarpone cheese, room temp
12 Twinkies
cocoa powderProcedure
1 Prepare espresso syrup. In a small saucepan, combine water & sugar. Bring just to a boil, stirring often to dissolve sugar. Remove from heat & cool. Add espresso (or coffee) and brandy.
2 Prepare mascarpone filling. Whip cream with sugar until peaks form Add vanilla and fold into mascarpone cheese.
3 Slice Twinkies into 1/2 inch slices. Place a layer in the bottom of a shallow 2 quart glass dish. Drizzle with half of the espresso syrup. Spread with half of the mascarpone filling.
4 Repeat with remaining ingredients.
5 Cover and chill 2 hours, or up to 24 hours.
6 Before serving, lightly dust top with cocoa.
Servings: 12

1 Whole chicken cut into 1/8’s (2 breasts, 2 wings, 2 thighs, 2 legs)
8 cups oil for deep frying
Western Breading:
3/4 cup wheat flour
3/4 cup soy flour
1 tbsp paprika
1 tbsp salt
1 tbsp black pepper
1 tbsp garlic powder
2 oz whole dry eggs
1 tbsp red pepper
2 oz non-fat dry milkProcedure
1 Combine all breading ingredients together.
2 Wash chicken off. Completely cover chicken with Western Breading. Deep fry until done.
Servings: 4

Pastry
2 cup flour
1/2 tsp salt
6 tbsp solid vegetable shortening
2 tbsp butter, chilled
1/2 cup orange juice, chilled (or as needed)Filling
3 lb baking apples
1 lemon, juiced
3/4 cup sugar
1 tsp cinnamon
1/8 tsp salt
4 tbsp butterProcedure
Pastry
1 Mix flour and salt in a bowl. Add shortening and butter. With a pastry blender or fork, cut butter and shortening into flour until crumbly. Gradually add enough of orange juice until dough holds together. Knead dough very lightly and form into 2 balls. Wrap in plastic wrap and refrigerate while preparing filling.
Filling
1 Peel and core apples. Cut into 1/2” slices and place in a large bowl. Sprinkle with lemon juice and mix with sugar, cinnamon, and salt. Let mixture sit for 10 minutes at room temperature.
2 Preheat oven to 425°F.
3 On a floured board, roll out one ball of pastry and fit into bottom of a 9-inch pie plate. Add filling and dot top with chilled butter. Roll out remaining pastry and cover apples, sealing edges carefully. Prick top of pie with the point of a paring knife to allow steam to escape.
4 Bake for 10 minutes. Reduce heat to 350°F and continue baking for an additional 40-50 minutes. Remove pie and allow to cool before serving.Servings: 8
