Since I’m so thrilled with the recipes @10dedfish provided I thought I’d add a recipe I’ve tried. Here’s ‘Ohana Green Beans to go along with the ‘Ohana Honey Coriander Wings on page 5 of this thread. We served these two dishes together for a Disney Dinner with friends and both were a big hit. Enjoy!!
‘Ohana Green Beans – Polynesian Resort
Yield: 6 servingsIngredients:
2 lb. fresh green beans
1 medium red onion, sliced ½ inch thick
3 cloves fresh garlic (whole)
3 TBS canola or vegetable oil
2 TBS low sodium soy sauce
2 TBS granulated sugar
½ tsp Kosher salt
To Taste – fresh ground black pepper
1 lb. bacon, crispy, crumbledDirections:
1. Wash green beans in cold water. Snip both ends and break in half.
2. Bring a saucepan of lightly salted water to a boil. Add beans and blanch for 1 minute. Strain.
3. Heat a wok or fry pan over medium high heat. Add oil, then add garlic and sliced onions and stir-fry for 2 minutes.
4. Add green beans and stir-fry for 2-4 minutes depending on how well done you prefer your beans cooked.
5. Add soy, seasonings and continue to stir-fry for 1 more minute.
6. Adjust seasonings if desired.

1/4 cup margarine
1 cup finely diced onion
1 cup finely diced celery
1 cup finely diced carrots
1/3 cup all-purpose flour
2 quart chicken broth (8 cups)
1/3 cup finely diced green pepper
1/3 cup finely diced red pepper or pimiento
1 cup cooked rice
1 cup finely diced cooked chicken breast
1 cup half and half, heated
salt to taste
white pepper to tasteProcedure
1 Heat margarine in a large saucepot and cook onion, celery and carrots over low heat until tender, stirring occasionally. Add flour and cook for 5 minutes, stirring constantly. Do not brown. Gradually stir in chicken broth until blended. Bring to a boil, cover, and cook over low heat 5 minutes.
2 Add green and red pepper or pimiento, rice and chicken and heat another 5 minutes. Stir in hot half and half. Heat but do not boil. Season to taste with salt and pepper. If all soup is not used when prepared, it may be frozen.

1 Banana Bread Pudding Cup
3 oz Edy’s Vanilla Ice Cream
Banana Rum Sauce
1 oz Butter, Unsalted
2/3 oz Sugar, Brown, Light
5 1/3 oz Banana, Peeled and Pureed
pinch Nutmeg, Ground
1/4 oz Captain Morgan Spiced Rum
1/6 oz Banana Liquor
1/24 oz Vanilla, ImitationProcedure
1 In a bowl place a warm Banana Bread Pudding cup in center.
2 Scoop Vanilla Ice Cream on top of round.
3 Pour Rum sauce (with garnished banana slices) over both.
4 Banana Rum Sauce
5 In sauce pan on med high heat, combine Rum and Banana Liquor. Allow alcohol to flame to cook out alcohol.
6 Once alcohol is cooked out, add butter, light brown sugar, pureed banana.
7 Allow butter and sugar to melt and combine. Season at end with nutmeg and vanilla.
8 Keep warm for service. Sauce can also be garnished with sliced bananas at service time.
Servings: 1

Twinings Pumpkin Chai Tea and Caramel Milkshake
Ireland Booth, Food and Wine Festival 2017
Serves 2Ingredients:
3 oz hot water
2 pumpkin spice chai tea bags
16 oz vanilla ice cream
2 tablespoons caramel syrup
1 tablespoon shortbread cookie crumbles (for garnish)Directions:
1. Pour hot water into a heatproof container. Steep tea bag in hot water for 3 minutes, squeeze tea bag and remove. Chill tea
2. Place ice cream, chilled tea and caramel syrup in a blender and blend until smooth
3. Pour into serving glasses and top with shortbread cookie crumbles

Irish Cheese and Stout Dip
Ireland Booth, Food and Wine Festival 2017
Serves 4-6Ingredients:
4 tablespoons butter
1/4 cup flour
2 cups half and half
1 cup Irish stout, room temperature
2 1/2 cups grated Irish Cheddar cheese
1/2 teaspoon Worcestershire sauce
Coarse salt, freshly ground black pepper, to taste
Crusty bread or pretzels for dippingDirections:
1. Melt butter in a large saucepan over medium heat. Add flour and cook, stirring constantly for 5 minutes, until very smooth
2. Slowly whisk in half and half and cook, stirring constantly for 5 minutes, until mixture begins to bubble and thicken
3. Add Irish stout and stir for 1 minute, then reduce heat to low
4. Add cheddar cheese and Worcestershire sauce. Stir until cheese is melted

10dedfish177 XPBaked Apple and Mascarpone Cheese Crêpes in Vanilla Custard
Crêpe Batter
1 cup cold water
3 large whole eggs
1 cup all-purpose flour
1/2 tsp saltApple and Mascarpone Cheese Filling
2 oz unsalted butter
1/2 lb medium diced granny smith apples, peeled and cored
1 tbsp cinnamon
1/4 tsp nutmeg
1/4 cup sugar
5 oz mascarpone cheese at room temperatureVanilla Custard
1 cup milk
1 cup heavy cream
1/2 vanilla bean, split in half, lengthwise
1/2 cup sugar
4 egg yolksProcedure
Method for Crêpes:1 In medium bowl whisk eggs and water until smooth.
2 Add flour, 1/4 cup at a time, and stir until smooth.
3 Heat 6-inch non-stick skillet on medium heat. Rub with clarified butter slightly and ladle batter in.
4 Spread batter around to form a smooth crêpe.
5 Do not let batter sit to avoid lumping. Cook till slightly brown and flip, cook until just done.
6 Take out of pan and place on paper towels. Repeat process.
7 Yields: 12 CrêpesMethod for Filling:
1 Heat large skillet on medium heat. Add butter and apples to skillet and start to cook.
2 Stir for 3 minutes, and then add cinnamon, nutmeg and sugar.
3 Cook for 2 minutes and remove from skillet and place in medium size mixing bowl.
4 Place apples in refrigerator for 10 minutes or until apples are cool.
5 When cool, mix apples with softened mascarpone cheese. Place aside to fill crêpes.
Method for Vanilla Custard:
1 Heat milk, cream and vanilla bean in a medium sauce pan.
2 Whisk together sugar and egg yolks to the ribbon stage. (When stirred the egg yolks will look like ribbons).
3 Slowly whisk in the hot milk and return the mixture to the pan.
4 Cook over low heat until the mixture coats the back of a spoon.Assembly:
1 Pre-heat oven to 350°.
2 Place the crêpes on a smooth surface. Use a tablespoon and place apple mixture onto the center of a crêpe pressing the filling down slightly. Fold the crêpe in half and then half again. The crêpe should look like a small piece of pie.
3 Place the crêpes into a non-stick casserole dish with the points sticking down.
4 Once all the crêpes have been placed into the dish pour the vanilla custard over the crêpes. The top of the crêpes should be visible.
5 Place the crêpes into the oven and bake for 7 minutes. Remove from oven and serve.Servings: 12

June 15, 2018 at 2:37 pm #80091I made this berries and cream cloud cake yesterday for the first time. It’s cool and light so it makes for a good summertime treat. We really enjoyed it!
Celebrate the royal wedding with this berries and cream cloud cake ????
