Mai Tai (DCL Mixology class)
Mai Tai – half a glass of ice and OJ, equal parts Disaronno Amaretto, Captain Morgan Spiced Rum, Myers Dark Rum

Start with mango and pomegranate purees (Minute Maid Smoothies brand recommended) approx. 1/3 of a Rocks Glass (double). Muddle with 2 slices of lime and mango with some mint. Add a 3 second count of Bacardi Limon’ rum, top with soda.
**remember: don’t tap the glass ????????

Elderflower Gin & Tonic – My favorite drink at the California Grill – 1 oz of St Germain Elderflower Liqueur, 1-1/2 oz of Hendrick’s gin, 3 – 4 oz of Fever-Tree Tonic water, Fresh lime, Ice

Konk Cooler
3 fl oz light rum (Suggestion – Malibu or Parrot Bay)
3 fl oz dark rum (Suggestion – Cruzan Black Strap)
4 fl oz orange juice
8 fl oz cream of coconut (Suggestion – Coco Casa)
6 fl oz passion fruit juice concentrate (Suggestion – Welches)
3/8 cup ice
Procedure
1 Mix in blender until slushy.
Servings: 2

The ice is way, way too short on the measurement, and the PFJ concentrate is near impossible to find (at least around our parts)…4 oz each on the rum, Goya Passion Fruit Juice cocktail instead of the concentrate, and 2 cups of ice… Pretty spot-on with how it tasted on the ‘Cay.

Caramel and shaved chocolate for rim of glass
Ice
2 oz Starbucks Coffee Cream liqueur
1 oz DeKuyper Buttershots schnapps
1 oz cinnamon schnapps
Nutmeg for garnish
Procedure
1 Moisten rim of martini glass and dip in caramel and shaved chocolate.
2 Shake Starbucks liqueur and both schnapps with ice.
3 Serve in prepared glass and garnish with nutmeg.
Servings: 1

Just found what looks to be the “official” recipe, and it appears pretty different (also cheaper) than what we have above. Going to test it out before posting.
