    Planning a wonderful trip with my family, including my DD36w/Hubby and GD8. Also taking FoF and her DD20. We are driving from Phoenix to Orlando in a Class A. Just going to take our time. 15 days of cross country driving from AZ to FL and back. 6 days at the parks. Chelle as been INVALUABLE!!!!!!!!!!!! in this planning stage. I cannot emphasize enough, “You dont know what you dont know”, and Chelle does!!! I am no noob in Disney Vaca planning and I learned even more this trip.

    Being our first trip to the campgrounds, we plan to have 1 meal in the parks a day (for the most part). Chelle’s insight has been incredible in planning these.

    The help I am hoping to get from this community is, for the meals in the motorhome.

    I am looking for easy to make, take, meals. Whether it be outside on the grill, nuking em, etc. Recipes!!! I NEED Recipes!!! I plan to freeze as hobo meals in foil and seal-a-meal. Prep in December and January. My trip begins Feb 7th and ends Feb 20th.

    Calling all cooks, HEEEEELLLLLLLLLLLLLLLLLLLLLLLLLPPPPPPPPPPPPPPPPPPPPPPPPPPPPP!!!!

    Im Italian, I cant make a meal unless it involves all my pots and pans and a days prep!

    The crock pot is your friend!
    My fav crockpot meal is chicken breasts, bbq sauce, brown sugar, pineapple chunks and potatoes. So simple and not a huge mess to clean!

    How about cutting up chicken, peppers, onions and fajita seasoning in ziplock bags and freezing them? Then all you have to do is thaw out and cook in a skillet for fajitas OR over an open campfire! YUMMY!!!!

    I agree that crockpot is your friend. I’ve made a bunch of things with a crockpot that are easy.

    My favorite and easiest meal is what I would call southwest style chicken.

    Chicken (breast or thighs, I use a combo usually)
    Black beans
    Salsa
    Optional taco seasoning
    Usually either 4 hours on high or 8 hours on low.

    You can use the chicken shredded with tacos or over rice or even just plain with some shredded cheese.

    You also could make some your favorite chili recipe in the crockpot except you will want to cook the meat first.

    Ive never been a crock pot fan. Meats tend to dry out even if you braise. Not sure I want to leave a pot on in a rented camper too. My paranoia might be strong there.

Let me know if you want the recipe – it is very easy to prepare but is several ingredients so I hate to type it all out if not what you are looking for. :) (ok, that sounds very conceited – I am not that great of a cook but the recipe is truly awesome…)

    Even though you are not a fan of the CP, this is one meal that can work for you with it:

    2# Boneless, skinless chicken breast or thighs (your preference)
    1 can cream of mushroom soup
    1 cup light cream
    1/2 cup parmesan
    1 cup bacon (cooked crisp and crumbled)
    1 cup peas (canned or frozen)

    Combine all ingredients except peas in crock pot. Set on low for 6 hours. Once cooked, shred chicken and add peas (heated separately prior to adding), keep warm. Prepare pasta or rice of choice (egg noodles or cheese tortellini work great for this recipe). Plate pasta/rice and top with generous serving of chicken preparation. :turkey:
