    Hey pals!

    Thought this might be a nice thread if anyone wants to share recipes. This is one that is really simple – you can sub in or out pretty much anything you’d like – and it can be made in one pot!

    Bacon pasta

    Take a half a pack of bacon, dice and cook for about 6 or 7 minutes, add some diced onion and garlic, you can also add some chopped tomatoes and red peppers if you like. Add a splash of white wine, 1/4 cup balsamic vinegar, and a dash of chicken broth if you’d like. You can also add some light cream if you’d like! Yum! Add in about half a box of cooked pasta, and then mix in about 1/2 cup or so of fresh grated parm, and some fresh chopped basil. I also like it with a dash of crushed red pepper.

    I made this when our kitchen was under construction – I only had one burner so I had to make the pasta first in the pot, put it aside, and then make the dish. It felt like such a luxury when I could cook two things at once when it was done!

    Thanks @nancyg, that sounds great! We do a one pot pasta for dinner every Tuesday (that’s our day that’s stuffed full with activities), so it would be nice to add a new one to the rotation.

    Tonight we have NOTHING so I am making a beef stew that is a bit labor intensive – I can be in the kitchen making it while the kids are at the island doing homework. You start with a whole roast instead of pre-cut stew beef. Cook’s Illustrated is so PICKY! ;)

    @nancyg that looks amazing! however my family does not like mushrooms (party poopers) and unless it is cheddar, mozzarella or something that comes pre-shredded in a bag from Kraft, i don’t buy it. cooking takes enough time without shredding my own darn cheese!!!

    Just to brag on Oklahoma a lil’ bit, did you know she’s from a city an hour north of where I live? :smirk: all the more reason for y’all to come visit me here in the Sooner State! ;)
